High oleic oil
We use high oleic oil in most of our preparations. It is a type of oil derived from sunflower, which has properties very similar to those of olive oil. It is characterized by its high content of monounsaturated fats (86%), which provides the same nutritional benefits as olive oil, according to validation by our dietitians.
High oleic oil is easier to digest and also contributes to health in several ways: it helps reduce levels of LDL cholesterol ("bad cholesterol") and increases HDL ("good cholesterol"), which can decrease the risk of heart disease. It also promotes better insulin sensitivity, helping to regulate blood sugar levels. Additionally, it is rich in vitamin E, a powerful antioxidant that protects the body's cells from oxidative damage.
As many properties of oils can be lost when cooking at high temperatures, at Nora Real Food we use high oleic oil mainly for cooking, since it is very stable at high temperatures. We reserve olive oil for raw dishes, such as vinaigrettes or dressings, to ensure that their vitamins are better preserved.
